Cocktail Commentary: Rhumbar at the Mirage

Vegas_Pina Colada

A piña colada is always one of those drinks that sound good in theory, but unless you are in the islands it can be really hard to find a good one. It is often the victim of being overdone – too much sugar, ice or cream. I had nearly sworn of this cocktail – barring any trips to the islands – but was once again tempted by all its promises.


It was in the midst of summer in Vegas when the heat can be unforgiving and the temperature looms around 100 degrees. Eventually, I ended up at the Mirage’s outdoor bar, Rhumbar. With its posh patio, palm trees hanging overhead and easy Caribbean feel, the piña colada seemed like a natural choice.


Creamy and luscious, the cocktail mixed together Mount Gay XO aged rum, Coco Lopez, coconut syrup, pineapple juice and fresh lime – served over ice. The end product was an island libation that was fresh tasting and surprisingly sophisticated.


What I love about Vegas is that anything is possible, and apparently that also includes finding a good piña colada.
