Cocktail Commentary: Pantone at Trick Dog

Updated: May 2, 2021

Pantone at Trick Dog

You are probably not going to just happen upon Trick Dog. Its location at 20th Street and Florida is in a quiet part of the Mission District more akin to a residential neighborhood. But people are flocking to the area and making a point to check out this current “it bar.”

Open only since January, Trick Dog is already winning rave reviews and accolades. Most recently, owners, Scott Baird and Josh Harris, were recognized by StarChefs.com as one of its 2013 San Francisco Bay Area Rising Stars.

Their cocktail menu stretches the bounds of creativity, and one look at it and you start to get an idea what all the fuss is about. The array of cocktails is as varied as the pantone color wheel the menu is printed on.

If you have ever wished that you could combine juicing with cocktailing then Trick Dog’s Pantone might be your dream realized. Served in a cocktail saucer, this drink is made with Four Roses Bourbon, Combier, Kummel, beets, ginger and lemon.

The beet juice lends the cocktail a luscious, deep red-purple color and an earthy flavor. The kummel gently peeks through and adds a hint of nuttiness to this well-rounded, hearty libation. After a couple of Pantones, I almost had myself convinced of the health benefits.

Like most people, we have a strong proclivity for fried food when we are drinking. But don’t expect your typical bar food, Trick Dog is elevating the discourse with its sophisticated yet rustic fare. We started off with fried green tomatoes and pork belly cracklins and rounded it out with the house pickled vegetable board and radishes served with Campari butter. After tasting the good life, I dare you to try and go back to typical, greasy bar snacks.

Like I said at the beginning, you probably won’t just stumble across Trick Dog. But the things worth having don’t always come easy.
